Ice cream cake with spiced apple-lingonberry compote.

This amazing dessert cake will be a hit at any dinner party, or why not enjoy it over a nice “fika” (coffee break in Swedish) with your friends. We have made it super simple with store bought pound cake and ice cream, but if you got the time and resources, you can be a true hardcore baker and make these ingredients from scratch as well.

Ingredient list

Cake base

  • 1 store bought pound cake
  • 1 quart vanilla bean ice cream
  • 1/2 cup Felix lingonberry with spiced apple and cinnamon

Spiced apple-lingonberry compote

  • 3 granny smith apples, peeled and chopped
  • 3/4 cup apple juice or apple cider
  • 1 tsp vanilla extract
  • 10 oz Felix lingonberries with spiced apple and cinnamon
  • 1 tbsp sugar

Topping

  • 1 cup sliced toasted almonds
  • Whipped cream

Recipe instructions

Cut pound cake along the length of the cake to form 2 pieces like a sandwich. Allow the vanilla ice cream to soften.

Line a loaf pan with parchment paper, or plastic wrap.

Spread 1/4 cup of lingonberry jam on cut side of pound cake bottom.

Then spread layer of softened ice cream.

Spread 1/4 cup lingonberry jam on cut side of the top of the pound cake. Place on top of the ice cream layer jelly-side down to form the cake.

Return the cake to the loaf pan. Wrap and return to freezer and allow at least 3 hours for the cake to set up before serving.

In a saucepan heat apple juice over medium heat, add apples and sugar, then cook until slightly soft. Take off heat and add vanilla and Felix spiced apple and cinnamon lingonberry jam.

Serve cake topped with warm lingonberry-apple sauce sprinkled with toasted almond slices. Can be served with whipped cream.
