Jerk pulled pork with lingonberry jam.

Cooking the perfect pulled pork sure takes a long time, so you better start cooking way before you get hungry. But once it is done, it will sooo be worth the wait. ABCs & Garden Peas gives us this delicious recipe that has the genius step of adding Felix lingonberry jam at the end. The jam balances the rest of this meaty  sandwich perfectly.

Pulled pork sandwich with Felix lingonberry jam.

Ingredient list

  • 3 lb pork loin
  • 1 onion, small
  • 2 jalapenos, seeded
  • 2 tsp smoked paprika
  • 2 1/2 tsp dried thyme
  • 2 tsp ground allspice
  • 2 tsp black pepper
  • 1 1/2 tsp garlic powder
  • 1/2 tsp cayenne pepper
  • 1/2 tsp salt
  • 2 tsp brown sugar
  • 12 oz beer
  • 1/4 cup balsamic vinegar
  • 10 oz Felix Lingonberries
  • 1 loaf hearty sliced bread

Recipe instructions

In a food processor, finely chop onion and jalapenos.

Mix all spices together. Coat pork loin with onion/pepper mixture and spice mixture. Rub in well with your hands.

Place pork loin in the bottom of crock pot. Add beer. Cook for 6 hours on low, or until cooked through and tender.

Remove pork loin, shred pork with a fork and add back to crock pot. Remove a cup or so of liquid, if desired (this will give you a thicker sauce.)

Add balsamic vinegar and cook for an additional hour.

Grill or toast bread (butter, if desired.) Serve pulled pork on bread, topped with Felix lingonberry jam.
