Felix lingonberry jam muffins.

Ingredient list

  • 2 cups flour
  • 3 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup sugar
  • 1 egg, beaten
  • 3/4 cup milk
  • 1/4 cup vegetable oil
  • 10 oz Felix Lingonberries

Recipe instructions

Preheat oven 325°F.

In a large bowl, stir together flour, baking powder, salt, and sugar.

Make a well in the center of the dry ingredients. Set aside.

In a small bowl, beat the egg, milk, and oil together. Pour all at once into the well in the bowl of dry ingredients.

Mix quickly and lightly until just combined. Do not beat, just stir with a spoon. The batter should be lumpy.

Stir in the jam.

Pour the batter into lined muffin cups. Bake for 22-25 minutes or until fully cooked.

Lightly sprinkle with sugar to garnish if desired - this is optional, but pretty!
