Lingonberry lamb pops.

Lingonberries are actually the perfect condiment to combine with lamb. The flavors complete each other and the tart flavor from the lingonberry adds an extra great dimension to the lamb. We believe that Momma Lew has written the perfect recipe for success.

Ingredient list

  • 2 tbsp fresh thyme, finely chopped
  • 2 tbsp fresh parsley, finely chopped
  • 1 tsp fresh rosemary, minced
  • 2 tsp Dijon mustard
  • 1 large garlic clove, minced
  • 5 tbsp red wine vinegar
  • 6-8 lamb ribs
  • 1/3 cup Felix Lingonberries

Recipe instructions

Preheat oven to 400°F.

Combine first 5 ingredients, mix in 1 tbsp vinegar.

Sprinkle lamb with salt and pepper on both sides.

In an oven proof pan on medium-high heat, sear lamb for about 2 minutes on each side, until browned.

Remove each piece of lamb and coat with the thyme mixture and return to the pan.

Place the pan in the preheat oven and bake for about 15 minutes.

A meat thermometer should be 138°F.

Let the pan rest for about 10 minutes.

Over medium high heat, add remaining vinegar and bring to a boil. Stir in salt and pepper to taste.

Add Felix lingonberry jam and let the sauce cook for about a minute.

Serve the sauce over the lamb pops.
